2 )含量的检测方法。对蔬菜、肉制品等食物中的NO-

理及其适用范围等进行了比较分析,并对各种方法的优缺点作了评述。 |

Abstract: The detection methods of nitrite (NO -
2 ) in food, especially in vegetables, meat and so on,was reviewed. The p rinci2
p le, measurement parameter and app lication fields of variousmethodswhich include Spectrophotometry (Hydrochloric acid naphthyle2
thylene diamine, Griess colorimetric, Catalytic Spectrophotometry and Ultraviolet spectrophotometricmethods) , Chromatography, Elec2
