Abstract:Earthworm is a kind of functional biological resource rich in protein.In order to increase the degree of protein hydrolysis of earthworm, the ratio of compound enzyme was optimized, and the regression equation model of compound enzyme ratio was established.U30 (3013) uniform design experiment was used to design the ratio of complex enzymes (papain, acidic proteinase, bromelain), and the ratio of the highest degree of hydrolysis of earthworm protein was selected as the index.The results showed that the ratio optimization regression equation was Y=58975+8270x2+12256x1x2x3+7677x1x3-5243x22, and the height of the regression equation was significant (P < 005).The optimal ratio was as follows:232% papain, 537% acidic protease and 231% bromelain.The value of model predicted the maximum hydrolysis degree to be 6260%, and the actual test showed that the hydrolysis degree was (6284±021) %, higher than the experimental group and the model predicted.Therefore, the optimized ratio of complex enzymes can improve the efficiency of enzymatic hydrolysis and provide a reference for earthworm proteolytic process.
