In this paper,the main influencing factors of the oxidative stability of vegetable oils and the oxidation mechanism of vegetable oils were discussed,the test methods and evaluation indicators of oxidative stability of the oil were classified and introduced.This paper revies the latest progress in the research of the oxidative stability of vegetable oils,aiming to provide references for better stydying the oxidative stability of vegetablel oils.
