介绍了异生素的概念、来源及其毒性作用，着重介绍了丙烯酰胺进入人体的途径．丙烯酰胺的毒性作用，以及近年来人们对丙烯酰胺的有关研究；对人们在生产和生活中容易接触的亚硝酸盐、二氧化硫及其盐类的毒性作用也作了介绍。
